As Promised….Chicken Coconut Curry!!

Happy Wednesday Friends!!

I finally made chicken coconut curry and it was SOOOO good!

You’ll Need:

4 chicken breasts

3 tbsp coconut oil- DO NOT SHAKE

2 cups snow peas, de-stringed

2 bell peppers, diced

1 serrano pepper, finely chopped

1/5 cups shrooms, chopped

1 can coconut milk

5 cloves garlic, chopped

1 lime, juiced

2 tbsp fish oil

4 sprigs green onion, chopped

2 tsbp green curry paste

3 cups cauliflower rice

Place the oil and the curry paste in a pan or electric wok and stir until mixed.  Add the chicken, garlic, green onions and serranos and saute for about 5 minutes or until aromatic.  Add the veggies and scrape the heavy cream off the top, add more of the liquid as needed.  It will be a little thick at this point.  Saute all the ingredients, stirring frequently for about 6-8 minutes.   Serve over cauliflower rice and enjoy!!!!!
