I hope everyone had a nice weekend. The most exciting part for me was these tacos. Go forth, and create them.
The best soft taco shells (from Paleo Comfort Foods):
8 egg whites
1/4 cup coconut flour
1/4 teaspoon baking powder
1/2 cup water
Coconut oil
Whisk all the ingredients together and preheat a nonstick pan with some coconut oil. Pour about 3 tbsp of mixture into the pan at an angle and swirl around. Once golden brown, flip. Make sure that they’re really golden or they’ll rip. These rock, they held up when they were loaded and taste ah-mazing.
Screamin Good Carnitas Tacos!:
The Pork-
3-4 lb pork butt (this is enough for 6 big tacos)
6-10 dry red adobo chilies
1 quart beef broth
1 cup orange juice
2 tbsp adobo seasoning
Water to cover
Put all the ingredients in the slow cooker and set to 6 or 8 hour setting. Once it’s close to feeding time pull the pork with 2 forks in a bowl. Toss with about 1/4 cup of the liquid in the crock pot and spread out on a baking dish. Preheat the oven to broil for about 15 minutes or until golden and slightly crunchy looking.
The Cabbage Mix Topping-
1/4 head cabbage
1/2 red onion
1 small can diced jalapenos
8 baby carrots
4 radishes
3 tbsp red wine vinegar
Salt and pepper
Mix all the ingredients in a bowl and cover with saran wrap and place in the fridge. I let mine marinate for about an hour.
Build your taco with mean and your marinated veggies, serve with some avocado and sprinkle with cilantro. Truly, amazingly YUM- Paleo style!

So I attempted to make the paleo tortillas but mine ended up tasting more like a fried egg. I put everything in that the recipe called for. Did yours taste like a fried egg?? Or is it just me?? Lol.
Haha the key is to make them REALLY thin. But yeah if you’re expecting a tortilla, it will taste a little like egg. I thought it complemented the pork well though! What kind did you make?
